1 medium onion, finely chopped

1 can of peeled tomatoes (400g) with juice
1 tablespoon of chopped parsley
300g of ground beef
2 cloves of garlic, minced
4 slices of bread, cut into small pieces
1 tablespoon of grated lemon zest
1 egg
Salt and black pepper to taste

In a microwave-safe bowl, combine the onion and olive oil
Microwave on high for 3 minutes with a lid
Add the tomatoes, parsley, and salt
Cook for an additional 5 minutes with a lid
Mash the tomatoes well. Reserve
Mix together the ground beef, garlic, bread, lemon zest, egg, salt, and black pepper
Form meatballs using 1 tablespoon of the mixture each
Place the almond cakes on top of the tomato sauce, cover, and bake in a preheated oven for 5 minutes or until the almond cakes are cooked through
