1 medium onion (100 g), finely chopped
1/4 cup of olive oil (60 ml)
1 can of tomato pulp (400 g - reserve the liquid)
1 tablespoon of parsley, chopped
1 teaspoon of salt
300 g of beef (patty or brisket), ground
2 cloves of garlic, minced
4 slices of bread, crumbled
1 tablespoon of lemon zest
1 egg
1/2 teaspoon of black pepper

In a large mixing bowl, combine the onion and olive oil
Microwave on high for 3 minutes
Add the tomato, parsley, and half of the salt
Mix well
Microwave for an additional 5 minutes, stirring occasionally
Blend the tomato to desired consistency
In a separate medium bowl, mix together the ground beef, garlic, bread, lemon zest, egg, black pepper, and remaining salt
Shape into small patties using 1 tablespoon of the mixture
Place the almond cakes on top of the tomato sauce
Microwave for an additional 5 minutes or until the cakes are firm and opaque
Taste the sauce and adjust the seasoning as needed
Serve hot
