Cut the cod fillets into small pieces
Boil the potatoes until tender, then drain and mash
In a bowl, combine the cod, potatoes, egg, garlic, cheese, flour, parsley, salt, and mix well to form a dough
Shape into fritters, coat with all-purpose flour, and refrigerate for 30 minutes
Heat a non-stick pan over medium-high heat, add enough oil to shallow-fry the fritters until golden brown
Remove from oil, place on paper towels to drain excess fat, and serve with a vinaigrette sauce.
