In a medium bowl, beat the eggs with an electric mixer until they become frothy. Reserve
In a medium saucepan, combine the sugar, milk, and lime juice
Stir and bring to a boil over high heat
Reduce the heat to medium and simmer again until the milk rises almost to the edge (about 10 minutes)
Add the reserved eggs, reduce the heat to low, and cook without stirring until the eggs are firm and rise to the surface (approximately 3 minutes)
Stir the mixture occasionally with a wooden spoon and cook until it has a smooth appearance (about 15 minutes)
Add the lime zest and mix delicately
Transfer to a serving dish, let cool, and serve.
