Combine the sugar with water and bring to a low simmer
Let it thicken to a fine thread consistency
Meanwhile, chop the chocolate and melt it in a double boiler
Add the eggs and milk and mix until smooth
Gently pour the chocolate into the syrup, being careful not to splash
Don't stir and let the mixture form small lumps
Cook until the syrup returns to the fine thread consistency
Remove from heat with the help of a skimmer and be careful to keep the lumps intact
Pour into a serving dish, drizzle with some of the syrup, and garnish with orange zest.
