Marinate the fish with salt and black pepper and let it rest for 15 minutes
While that's happening, soak the turkey rind in milk and mix in the grated carrot, scallion, and chopped green olive
Season with salt and black pepper
Mix well and season again with salt and black pepper
Stuff the fish with the seasoned turkey rind and close the opening with toothpicks to prevent the filling from escaping
Place the fish in a baking dish and drizzle with olive oil
Bake in a medium preheated oven for approximately 20 minutes
Serve warm.
