1 tablespoon of finely chopped onion

2 cups of milk - 480ml
Salt and nutmeg to taste

Fry the onion in butter or margarine until golden brown
Add the wheat flour and cook for another minute, stirring constantly
Remove from heat
Gradually add the milk, stirring continuously
Return the pan to the heat and cook, stirring until thickened
Season with salt and nutmeg
Divide the mixture into 4 ramekins with a capacity of 1/2 cup
Place an egg on top of each ramekin
Dust with grated cheese and sweet paprika
Arrange the ramekins in a baking dish, with 4 cm of water
Cover and bring to a simmer
Cook until the eggs are cooked to desired doneness
Serve 4 portions.
