Season the quirera with salt to taste
Drain the warm cooked quirera in a moist ring mold filled with cold water
Let it rest for 25 minutes
Unmold onto a heatproof tray that can be taken to the oven
Mix the egg and olive oil
Brush over the entire surface of the quirera ring
Sprinkle the Parmesan cheese over the ring
Bake in a moderate preheated oven (180°C) for 30 minutes
Serve as an accompaniment to picadinho, chicken, stews, etc
