4 large raw potatoes, peeled and cut into cubes

Place the potatoes, water, and salt in a covered pot and cook for 10 minutes over low heat
Remove the lid and cook until the water evaporates, over high heat
Add the onion, black pepper, and margarine and sauté until lightly browned, stirring constantly
Add the eggs and milk and let it warm through
Sprinkle with chopped parsley and serve
Serve 4 portions.
