1 cup of rice

Place the rice in a bowl and cover it with three times as much water
Let it soak for 30 minutes
Heat the olive oil and add the clove, cardamom, bay leaf, cinnamon stick, thyme, coriander, and onion
Simmer for one minute
Add the sliced onion and sauté for five minutes
Drain the rice and reserve the liquid
Place the rice in a pan and fry it well
Add the reserved liquid and scallions and season with salt
Cook until the rice is tender.
