2 cups of whole grain rice
2 small onions, chopped
2 tablespoons of olive oil
6 cups of boiling water
Salt to taste
1 tablespoon of butter
4 cups of American lettuce, chopped
Parsley to taste

Wash the rice and drain well
Place in a pot and bring to medium heat, stirring until dry
Add one onion and oil and sauté, stirring for 3 minutes, until the rice is loose
Join the water, season and cook until dry. Reserve
Sauté the remaining onion in butter until soft
Add the lettuce and cook, stirring, until the leaves wilt (about 2 minutes)
Season with salt
Add the rice and simmer over low heat, always stirring
Serve with parsley sprinkled on top
Serves 8 portions
Note: Lettuce can be substituted with cabbage, Japanese bok choy or spinach.
