For the roll:
7 large eggs at room temperature, separated
1/3 cup unsalted butter or margarine, softened
6 tablespoons all-purpose flour
1 teaspoon salt
1/4 teaspoon black pepper
1 1/4 cups milk
1/2 cup grated Parmesan cheese
1/2 cup grated Minas or Muenster cheese
1/2 teaspoon active dry yeast
Filling:
1 large bunch of cooked and chopped spinach
2 tablespoons unsalted butter or margarine, softened
4 tablespoons finely chopped onion
1/2 teaspoon salt
4 tablespoons grated Minas or Muenster cheese
1/2 cup heavy cream or half-and-half
100g of Minas or Muenster cheese, cut into slices

Filling:

4 tablespoons finely chopped onion
1/2 teaspoon salt
4 tablespoons grated Minas or Muenster cheese
1/2 cup heavy cream or half-and-half
100g of Minas or Muenster cheese, cut into slices
Melt the butter in a saucepan
Remove from heat, add flour and mix vigorously with a wooden spoon or whisk
Season with salt and black pepper
Heat again and stir until thickened and smooth
Add the grated cheese and mix well
Beat the egg whites until frothy and stiff, then add to the cheese mixture and mix until homogenous
Beat the egg yolks until creamy and pale, then add to the cheese mixture and mix until smooth
Pour the batter into a lined 40x26cm baking dish
Bake in a moderate oven (180°C) for about 15 minutes, or until the surface is puffed and firm
Test by pressing with your finger
While that's cooking, prepare the filling: squeeze out excess moisture from cooked spinach in a cheesecloth or fine-mesh sieve
Heat butter and sauté onion until golden brown
Add spinach, salt, 1/4 cup grated cheese, and heavy cream; mix well. Reserve
Unmold the roll still warm over a clean, dry cloth lightly dusted with Parmesan cheese
Gently remove paper
Spread the filling over the roll
Roll up tightly using the cloth as aid
Place the roll seam-side down in a buttered baking dish
Cut slices of cheese into triangles and arrange on top of the roll
Bake at high heat (220°C) to melt the cheese, then transfer to a serving platter or board
