1/2 kg of peeled and chopped sweet potatoes
2 scallions, well washed and chopped
2 onions, peeled and chopped
1 carrot, peeled and chopped
1 celery stalk, chopped
thyme
2 1/2 liters of water
1 tablespoon of salt
pepper to taste
1 /4 cup of butter
1 /2 cup of heavy cream
chopped green onion

Combine all the vegetables and place them in a pot with water
Tame and cook over low heat for approximately 2 hours
Season with salt and pepper to taste
Drain the vegetables, reserving the liquid
Purée the vegetables using a blender or food processor
Place the mixture back into the liquid and add butter and heavy cream
Heat it up again and verify the seasoning
Serve sprinkled with chopped green onion
Yield: 2 liters or 6 servings.
