In a pot, over low heat, sauté the onion in two tablespoons of olive oil for 5 minutes
Add the washed and drained rice and cook for another minute

Add boiling water and season with salt
Cover and cook on low heat for 20 minutes or until the rice is tender

Place the broccoli over the rice and drizzle with the remaining olive oil
Cover again and let it rest for 5 minutes

Mix well, transfer to a plastic container, let it cool, and then refrigerate
Remove the air and freeze

To serve, remove from the freezer 6 hours in advance, let it thaw in the refrigerator, steam in the vapor for 15 minutes, or microwave at maximum power for 3 minutes.
