1/2 kg of carrot
1/2 kg of onion
1/2 cup of water
1/4 cup of white wine vinegar
1/2 cup of dry white wine
1/3 cup of olive oil
1 tablespoon of oregano
2 bay leaves
salt and black pepper
1/2 kg (1 package) of penne pasta or fusilli
1/2 kg of carrot
1/2 kg of onion
1/2 cup of water

Grate and cut the carrot into 5 cm long strips and 1/2 cm thick
Peel and cut the onion into 1 cm rings
In a large pan, combine the carrot, water, vinegar, wine, oil, and seasonings
Bring to a boil, reduce heat, cover, and simmer for 5 minutes
Add the onion and cook for an additional 5 minutes
The two vegetables should be cooked but still firm
Remove from heat and let cool
Cook the pasta until it is "al dente" (still consistent)
Drain
Let cool and mix with the vegetables and liquid
Check seasoning and serve
