6 large tomatoes
1 tablespoon of finely chopped onion
1/2 cup of chopped fresh parsley
1/2 cup of black olives, pitted and sliced
1/3 cup of mayonnaise
1 can of tuna in water, drained and flaked

Peel the tomatoes
Cut off a thin slice from the top
Remove the pulp from the tomatoes
Sprinkle with salt
Turn the tomatoes upside down to drain well
Mix the remaining ingredients, except for lettuce
Season to taste
Stuff the tomatoes and serve on lettuce leaves
If desired, garnish the tops of the tomatoes with a sprinkle of chopped parsley
Serve 6 portions.
