1 bunch of green onions
3 tablespoons of olive oil

1 1/2 cups uncooked rice
3 cups chicken or vegetable broth
Salt and black pepper to taste

Wash and dry the green onions well
Trim the root end
Chop the white and green parts
Heat the olive oil in a medium pan
Add the onion and cook over low heat, stirring frequently for 10 minutes
Add the green onions and rice
Cook over high heat for 4 minutes, stirring occasionally
Add the broth or water
Stir well and bring to a boil over high heat
Cover, reduce heat to medium, and simmer for about 10 minutes, until the rice is tender and all liquid has been absorbed
Remove from heat and let sit covered until ready to serve
To serve, check seasoning and add salt and black pepper to taste
Serve in a serving dish, sprinkled with chopped cilantro
Serves 4-6 people.
