Heat the olive oil in a large skillet, sauté the minced garlic and toast the rice
Add the boiling water and coconut milk
Stir well
Season with salt to taste
Simmer over low heat until the rice is completely cooked and dry
In a small pan, add the shredded coconut and cook over medium heat, stirring constantly, until lightly toasted
Combine the cooked rice and toasted coconut
Serve hot.
