1 Boil the sweet potatoes
Drain well
Mash with lime juice, salt, black pepper, and flour
2 Shape into 2-inch diameter fritters and then coat in flour
Set aside
3 Heat the vegetable oil and fry a few fritters at once
Drain on paper towels and serve immediately.
