1 1/2 cups of rice

Heat the olive oil and add the minced garlic
Let it cook until golden brown, then add the rice
Stir for two minutes and add the hot water
Stir and season with salt and black pepper, and continue cooking until almost dry
Check if the rice is still too moist, if so, add cold water
When almost ready, incorporate the thyme, lemon juice, and lemon zest
Stir slowly with a fork and finalize the cooking.
