1 package (500g) of small macaroni (such as penne, parmesan, etc.)
Ferrated salted water
1 egg
1/4 teaspoon of salt
1/2 teaspoon of mustard
1/4 cup of finely chopped green onion with the green part
3 tablespoons of vinegar
1/8 teaspoon of paprika
1 1/4 cups of olive oil
4 hard-boiled eggs, cut into 4 pieces
3 to 4 crispy fried and crumbled bacon strips

Cook the macaroni in boiling salted water until it's al dente
Drain and rinse with cold water
Drain again
Place it in a large bowl
In a blender, combine the egg, salt, mustard, onion, vinegar, and paprika
Blend until creamy
With the motor running on low speed, slowly add the olive oil while blending until thickened
Pour over the cooked pasta and mix gently
Cover and refrigerate for 4 hours or overnight
Garnish with hard-boiled eggs and crispy bacon.
