Cook the flower-of-the-field in boiling water, uncovered, until tender
Drain and rinse with cold water, then blend into a puree, and return it to the cooking liquid
Add milk
Melt butter, add onion, and cook until soft but not browned
Add wheat flour and mix well
Season with salt and black pepper
Gradually add the milk mixture while stirring constantly
Cook for 5 minutes
Pour slowly over the egg and mix well
Garnish with grated cheese
