1 Peel the sweet potatoes and cook them in water until they're very tender. Reserve
2 Heat the olive oil in a pan and sauté the onion
Blend the cooked sweet potatoes with the cooking liquid and sautéed onion in a blender
Add to the pan, season with salt and pepper, and let it simmer
3 Turn off the heat and mix in the heavy cream
Sprinkle with chopped scallions and grated cheese
Serve the soup with crusty bread.
