Preheat the oven to around 120°C
Wash and dry the potatoes
Cut them in half lengthwise, then into medium-sized slices
Set aside
Peel and finely chop the onion
Arrange the potato and onion slices on a baking dish
Wash and dry the sorrel sprigs, remove leaves and set aside
In a bowl, mix together the lemon broth, olive oil, salt, black pepper, and chopped parsley
Brush the potatoes and onions with this seasoning, ensuring everything is well coated
Place the baking dish in the oven for 40-45 minutes or until the potatoes and onions are cooked and golden brown
Remove from the oven and sprinkle with parsley
