2 kg of small sweet potatoes
2 cups of tomato juice
1/2 cup of olive oil
1/2 cup of white wine vinegar (or more to taste)
salt and black pepper to taste
1 tablespoon of garlic powder
200 g of fried and shredded bacon, cut into cubes
6 green onions, thinly sliced
400 g of cooked ham, cut into cubes
6 hard-boiled eggs, cut into quarters
8 green scallions, thinly sliced
1/2 kg of cherry tomatoes, cut into quarters
6 thin slices of radish
2 kg of small sweet potatoes

Wash the sweet potatoes and let them cook for 20 minutes
Let them cool slightly and peel
While the sweet potato cooks, mix together the tomato juice, olive oil, and white wine vinegar
Season with salt, black pepper, and a good amount of garlic powder
Cut the cooled sweet potatoes into slices and immediately add to the tomato mixture
Let it sit for about 2 hours
Check the seasoning
Slice the green part of the scallion, slice thinly, and soak in cold water for about 5 minutes
Drain and mix with all the ingredients and place in a salad bowl lined with lettuce leaves (optional)
Serve 6 to 8 people.
