1 medium onion diced

1 can of drained mixed vegetables

1 Sear the onion and garlic in olive oil for 3 minutes, stirring frequently
Add the chicken, mushroom, carrot, and celery, and cook until tender
2 Add the cooked rice and chicken broth
Cook until the rice is tender but still fluffy
Add the mixed vegetables, stir well, check the seasoning, and serve.
