2 zucchinis
1 chopped onion

2 cups of fresh mushrooms sliced
1 cup of chicken broth
2/3 cup of orange juice

In a large bowl, mix the rice, olive oil, salt, and curry powder
Place in the microwave at high power for 1 minute
Chop the bell pepper and slice the zucchini into rounds
Combine with the onion, green beans, mushrooms, chicken broth, and orange juice
Cover and microwave at high power for 15 minutes, stirring halfway through or until the rice is cooked
Let it rest in the microwave for an additional 5 minutes before serving.
