2 tablespoons of butter
2 tablespoons of olive oil
1 small onion, finely chopped
3 cups of uncooked rice
Salt to taste
1 1/2 cups of passa without seeds
1 cup of toasted almonds
1 cup of fresh mushroom, sliced
5 cups of water
1 cup of champagne
To sprinkle
Toasted almonds, skinless

In a pan, melt the butter and olive oil
Sauté the onion until golden brown
Add the rice and stir-fry for a bit
Season with salt, passa, almonds, and mushroom
Cover with water and let it cook until it starts to dry out
Pour in the champagne
Remove from heat when the rice is cooked and let it rest for 15 minutes
Just before serving, sprinkle with more toasted almonds.
