1 liter of water
4 tablets of fresh biological yeast
2 spoons (soup) of salt
1 spoon (soup) of sugar
1 spoon (soup) of oil
2 kilograms of wheat flour
In a bowl with the water, dissolve the yeast
Add the salt, sugar, and oil, and mix well
In another bowl with the flour, gradually add the dissolved yeast to form a homogeneous mixture
Knead well and divide the dough into 10 portions
Let it rest for at least an hour
Roll out the dough on a floured surface, forming disks of 30 or 35 cm
Yields 10 pizzas
To freeze the dough, place the disks in a preheated medium-temperature conventional oven (180°C) for 10 minutes or in a charcoal oven for 1 minute
Let it cool down, wrap each one individually in plastic film and store in the freezer for up to three months.
