3 tablespoons of butter or margarine

In a pot, melt 2 tablespoons of butter or margarine
Add the onion and sauté until it's caramelized
Add the rice and stir quickly
Add the water, bay leaf, salt, black pepper, and pepper sauce
Let it come to a boil, then cover and cook for about 20 minutes
Add the remaining butter or margarine and cilantro
Stir well
Serve in 4 portions.
