In a medium saucepan, sauté the onion in olive oil over high heat until it's translucent (about 3 minutes)
Add the tomato pulp with its liquid and simmer for about 2 minutes, stirring occasionally
Add the salt, rice, and water, mix well, and cook, stirring occasionally, until the rice is soft and creamy (about 20 minutes)
Remove from heat and serve immediately
