2 tablespoons of chopped green scallion (only the green part)
4 stalks of fresh parsley, chopped
4 tablespoons of butter or margarine
1 1/4 cups of uncooked rice
2 cups of chicken broth
zest of 2 oranges
juice of 4 oranges
3 tablespoons of seedless raisins
salt and black pepper to taste

Melt the butter or margarine in a saucepan
Add the chopped scallion and parsley, and cook until they are soft
Add the rice, stir well, and cook until it browns
Add the chicken broth and orange juice
Let it come to a boil, then add the grated orange zest, raisins, salt, and black pepper
Cook with the lid on until the liquid has been absorbed
Serve hot, garnished with 6 sprigs of parsley
Note: This is an excellent accompaniment to roasted duck or pork.
