Place the onion, thyme, black pepper, and parsley in a pot with the water and simmer for 5 minutes like a chá
Cool that broth and reserve it
Melt 1 tablespoon of butter and sauté the rice until it starts to stick to the pot
Add the reserved water and season with salt
Cook over low heat until the rice is cooked, adding more hot water if necessary
Remove from heat, add the remaining butter, and mix well
Serve immediately sprinkled with chopped fresh parsley.
