1 1/2 kg of fish pieces (cod, flounder)

Season the fish with salt, black pepper, and lemon juice
Let it rest for 20 minutes
Drain the fish and coat the pieces in wheat flour
Fry them in half of the heated olive oil and reserve
In the same pan, sauté the onions until they turn golden brown
Add water, stir, and add the fish
Cook for 5 minutes and reserve the fish and sauce with the onions separately
Heat the remaining olive oil and cook the rice
Add the sauce, season with salt, and add the flaked fish
Cook until the rice is tender
If needed, add more hot water
Remove from heat and transfer the rice to a round form
Let it rest for 5 minutes and unmold
Serve decorated with almonds and parsley.
