1 pound of clean dust, about 1 kg
5 cups of boiling water
1 medium-sized onion, finely chopped
2 cloves of garlic, minced
1/4 cup of olive oil
4 diced tomatoes, seeds and skins removed
1 cup of white dry wine
2.5 cups of rice
Salt and black pepper to taste
2 tablespoons of chopped parsley

Let the dust simmer in boiling water for 5 minutes
Reserve the water and cut the dust into small pieces
Fry the onion and garlic in olive oil until they start to brown
Add the dust, tomatoes, and stir-fry for 1 minute, always stirring
Add the wine and let it simmer for 2 minutes, stirring occasionally
Mix well
Add the rice and reserved water
Season with salt and black pepper
Cook over low heat, covered, until the rice is soft and creamy (if needed, add a little more water)
Dust with parsley on top and serve still warm
