Leave the puff to boil in water for 5 minutes
Reserve the water and cut the puff into pieces
Fry the onion and garlic in olive oil until golden brown
Add the puff, tomato, and stir-fry for 1 minute, always stirring
Add the wine and let it simmer for 2 minutes, stirring occasionally
Stir occasionally
Add the rice and reserved water
Season with salt and black pepper
Cook over low heat, covered pan, until the rice is tender and creamy (if necessary, add a little more water)
Dust with parsley and serve hot
