400g of cod loin
1 lemon
black pepper to taste
1/3 cup of wheat flour
1 egg
50g of grated parmesan (1/2 cup)
2/3 cup of olive oil
4 cloves of garlic
300g of small cooked potatoes
100g of raw scallions
3 soup spoons of white wine
2 hard-boiled eggs
400g of cod loin

Soak the cod loin in water for 48 hours, changing the water occasionally
Remove the skin and bones, but don't tear it apart
Season with lemon juice and black pepper
Dredge in wheat flour, then egg, and finally grated parmesan
Heat the olive oil with the garlic cloves
When the garlic is golden brown, remove from the oil
Place the cod loin in a baking dish with the potatoes and scallions, drizzle with olive oil, lemon juice, and white wine
Bake in a moderate oven (180°C) and baste occasionally with the proper sauce
Once done, garnish with hard-boiled eggs cut into slices
Serve 4 portions.
