Choose the rice and bring it to a boil with 1 liter of water, lemon peel, and a pinch of salt
Cook, stirring with a wooden spoon
Remove some of the milk and warm up the rest
When the water has dried, add the hot milk
Continue cooking and stirring
Add the sugar and check if the rice is cooked: it should not be too hard or overcooked
Beat the eggs with a little reserved milk
Remove the pan from the heat and add the eggs
Bring to a boil again and stir until it starts to simmer
Transfer to a baking dish and decorate with cinnamon
Serve 12 portions.
