Place the rice and water in a medium saucepan and bring to a boil
Above boiling, reduce heat and cook until the water evaporates, stirring occasionally
Mix the passion fruit pulp with sugar and add it to the saucepan
Add the milk and cook over low heat, stirring occasionally, until the rice is tender and forms a creamy consistency
Serve in 8 individual molds or ramekins and refrigerate
