In a 1.5-quart heatproof bowl, whisk together milk, sugar, rice, butter or margarine, salt, nutmeg, and vanilla extract
Bake uncovered for 2.5 hours, stirring frequently, until the rice is very tender
Add raisins after the first hour in the oven
Serve warm or chilled with sweet sauce or whipped cream
Makes 4 to 6 servings
If desired, a thicker pudding can be made by increasing the amount of rice to 5 tablespoons'
