In a pot, place 6 cups of water and add the rice
Let it boil, high heat
Lower the heat and cook until all the water is evaporated
Add the milk, increase the heat, and add the lemon zest
When it starts to boil, lower the heat
Cook for 5 minutes, stirring occasionally
Remove the lemon zest and reserve
Beat the eggs with sugar until light and fluffy, add to the milk pot and stir
Cook until the rice is tender
Remove from heat, let cool, place in a bowl, and refrigerate until serving time
Serve cold.
