3 cups of water

6 slightly beaten eggs

In a medium saucepan, combine the water, lemon peel, and butter
Bring to a boil, then add the rice
Stir well and cook over low heat until the liquid is absorbed
Add 3 cups of milk at a time, stirring only once between each addition, until all the milk has been incorporated
Cook for about 50 minutes, or until the rice is tender and forms a crust on the bottom of the pan
When the rice is cooked, stir in some of it with the eggs, then return to the saucepan
Mix well without scraping the bottom
Bring to a boil again, then remove from heat
Serve hot, dusting with cinnamon as desired.
