In a mixer, beat the egg yolks until they are doubled in volume
Add the sugar and beat for five more minutes
Melt the chocolate in a double boiler and add it to the egg yolk mixture
Mix well
In a separate mixer bowl, whip the heavy cream until it is stiff and almost firm
Fold the whipped cream into the chocolate mixture with a spatula
Beat the egg whites until they form stiff peaks and fold them into the mousse
Mix carefully
Distribute among ten serving dishes and refrigerate for two hours
Garnish with shavings of white and mean dark chocolate, and serve
