6 tablespoons of milk (approximately)
2 cups of cooked mashed potatoes passed through a blender or strainer

1 tablespoon of cold water

Preheat the oven
Grease a baking dish approximately 33 x 23 x 5 cm
Sift together the flour, yeast, grated cheese, and salt into a bowl
Add the butter to small pieces and mix well
Add the eggs and milk enough, stirring lightly with a fork until the dough comes away from the sides of the bowl
Make a ball and divide it into two equal parts
Open one half of the dough into a slightly larger rectangle than the prepared baking dish
Cover the bottom of the baking dish with the dough, leaving it to rise a little on the sides
Spread the mashed potato purée over the dough and sprinkle with cinnamon
Open the remaining dough and place it over the mashed potato purée, close the edges of the dough on top and underneath
Beat the yolk with cold water using a fork and brush over the dough
Dust generously with cheese
Bake in a moderate oven for 40 minutes or until golden brown
Serve warm or cold, cut into squares.
