1 cup whole grain rice
8 cups water
2 cups fresh pineapple, cut into cubes
1 cup freshly grated coconut
1 cup cream mixed with 1 tablespoon lime juice
1 pinch salt

Cook the rice in boiling water until it's tender
Drain well and place in a bowl
While still warm, add the pineapple and let it chill
After 1 hour, add the coconut and cream and mix until the rice is well coated with the cream
Season with salt
Refrigerate before serving
Serve chilled for up to 8 hours
