8 artichokes

Rinse the artichokes well, cut off the stems and remove a few or four loose leaves from the bottom
Place plenty of water with salt in a large pot and let it come to a boil
Add the lemon slices, pepper, and rosemary
Add the artichokes, placing them stem-side down, and cook for 30 to 40 minutes
The artichokes will be cooked when it's easy to remove one leaf
Remove from the water and let drain stem-side down
Arrange the artichokes on a platter and serve with various sauces.
