1 chicken cut into pieces
salt and pepper to taste
3 tablespoons of butter or margarine
1 medium onion, chopped
1/2 cup of chicken broth
1 medium eggplant, peeled and cut into cubes
2 medium tomatoes, peeled and chopped
1/2 teaspoon of dried oregano
1/2 teaspoon of paprika
1/4 cup of grated Parmesan cheese

Sprinkle the chicken pieces with salt and pepper
Melt the butter and brown the chicken on all sides. Reserve
Sauté the onion in the same pan for a few minutes
Add the broth, eggplant, and tomatoes
Sprinkle with paprika and oregano
Add the chicken and cover with some sauce
Cover the pan and cook until the chicken is tender
When serving, sprinkle with grated Parmesan cheese and serve 4 portions.
