Half pound of cod
1 3/4 cups of olive oil
2 cloves of garlic
Breadcrumbs as needed
3 egg yolks
Salt and pepper to taste

Heat the olive oil in a pan over medium heat with the garlic, until golden
Add the cod coated in breadcrumbs
Fry for 5 minutes on each side
Remove from the pan and keep warm with some of the remaining oil
Fry the potatoes in the same pan until they are cooked through, then drain excess oil
Set aside
Whisk together the egg yolks
Gradually add the remaining olive oil that was used to fry the cod, while whisking constantly
Season with salt and pepper to taste
Pour the mixture over the warm cod cakes
Serve the cod cakes in a baking dish with the golden potatoes arranged around them
Use small potato pieces and, if desired, blanch them briefly beforehand to speed up cooking.
