Cut the tambaqui lengthwise, dividing it into 2 bands
Line a baking dish with aluminum foil, place one of the fish bands on top with the skin facing up and cover with a layer of coarse salt
Place in a medium oven for about 1 hour
Then do the same with the other band
To serve, remove all the skin from the fish with salt, which will come off easily
