1 cup whole grain rice
8 cups water
2 cups fresh pineapple, cut into cubes
1 cup shredded fresh coconut
1 cup half-and-half mixed with 1 tablespoon lime juice
1 pinch of salt

Cook the rice in boiling water until it's tender
Drain well and place in a bowl
While still warm, combine the pineapple and refrigerate
After 1 hour, add the coconut, half-and-half, and mix until the rice is well coated with cream
Season with salt
Serve chilled.
